Steph’s New Brew Review: Paideia

St. Boniface Brewing Company Paideia, a 5% ABV American Pale Ale

Appearance Golden in color; fluffy off-white head.
Aroma Aroma of biscuity malts with citrusy, fruity hops.
Taste Biscuity malt base, but not too sweet; tropical fruit notes.
Mouthfeel Medium-bodied; moderate carbonation.
Overall A well-rounded, drinkable go-to beer. Delicious.

St. Boniface Brewing Company was founded in the spring of 2010 by Jon Northup and Mike Price. They opened a one barrel nano-brewery in Ephrata, PA on February 2, 2011.

The original plan was to brew on weekends and open to the public on Saturdays for sales.

By April Jon was brewing full time and managing the business. In September, Jon and Mike designed and built a three barrel brewhouse. In February 2013 they opened their new larger location on Main Street just west of downtown Ephrata, which expanded production.  The taproom opened in June.

Today craft beer lovers can visit the taproom for pints, growler fills, can sales, and tasty food from local food trucks. Jon is now brewing on a 15 barrel system, canning both Paideia APA and Libation DIPA.

Paideia (pronounced pie-day-uh) is their year-round 5% ABV American Pale Ale. Paideia is Greek for the development of the perfectly well-rounded citizen. Paideia the brew is a single-hopped pale ale with Citra hops and a blend of malts to create a bright aroma and flavor with little bitterness. This well-rounded beer captures the essence of the Greek ideal.
