DESTIHL Brewery, located in Bloomington, IL, produces 15,000 barrels annually on their 60 barrel, steam-heated Saaz Brewhouse.

Two decades ago, CEO and Brewmaster Matt Potts was given his first homebrew kit as a Christmas gift from his wife. Potts opened the first DESTIHL Restaurant & Brew Works in 2007.

DESTIHL’s Wild Sour Series includes several beer styles that feature tartness from wild fermentation in an extended sour mash process. The ales in this series are not barrel-aged, but are soured with their same spontaneous, wild microflora derived from DESTIHL’s Reserve Sour barrels.

There are three German-style sour ales in the series (Counter ClockWeisse (a Berliner Weisse), Here GOSE Nothin’ and Adambier), as well as four Belgian-style sours (Flemish Amber, Flanders Red, Dissension (a Black Berliner Weisse) and Lynnbrook Raspberry Sour Ale).

Here GOSE Nothin’ is a Leipzig-Style Gose that undergoes a spontaneous fermentation, similar to Belgian-style Gueuze/Lambic beers. The ale features a complexity of acidic flavor and aroma from the wild yeast lactic fermentation.

Here GOSE Nothin’ won a silver medal from the Beverage Testing Institute® in 2015 and a silver medal at the Los Angeles International Beer Competition in 2014.
